Amaze your guests with this delicious pear tart recipe.
Ingredients for 4 persons :
- 1 egg yolk
- 4 tbsp. of milk
- 350 g pear jam
- 400 g pears
- 1 tsp. icing sugar
- vanilla beans
Pastry
- 300 g flour
- 40g caster sugar
- 150 g semi-salted butter
- 5 to 8 cl of water

Pear pie
For the shortcrust pastry:
- In a food processor, mix the flour, the 40 g of caster sugar, the 150 g
diced cold salted butter, and half the water.
- Work the dough until you obtain a compact ball.
- If the dough is not wet enough, add the rest of the water in a small stream.
- Wrap the shortcrust pastry in cling film, let it rest in the refrigerator for 1 hour.
Preheat the oven to 180 ° C (th.6).
- Peel and cut the pears into small cubes.
- In a salad bowl, pour the jam, add the vanilla seeds and the diced pears. Mix everything and set aside.
- Roll out the dough finely. Reserve a few strips of dough to decorate the top of the pie with braces.
- Garnish a tart mold which has been buttered and floured.
- Prick the dough.
- Place baking paper and ceramic balls (or other).
Bake for 15 to 20 minutes.
- In a ramekin, beat the egg yolk with the milk and icing sugar.
- Take out the precooked dough, garnish with the pear preparation.
- Arrange the strips of dough crosswise on top.
- Brush with the egg yolk-milk-icing sugar mixture.
- Bake for 20 minutes until a nice color is obtained.
- Serve your tart warm or cold.
